The bike is a 'K2- Oceanside LWB', and the brakes are 'Tektro'. I recall that I'll probably need new forks, discbrake wheel hubs and an adapter for the stern but any information on what and how is helpful!!!

first off, you will have to get new forks and wheels and all that chattels. there will probably a bunch of welding involved and you'll need to match up the diameter of the forks with the first tube on the frame. then you'll probably have to cut the fork

Disc decelerate for beach cruiser is 'overkill'. You don't need that stopping power do you? But if you really want to do it, get opinion from a bike seek in your area that is known to be able to modify bike frame/parts...not your regular put-it-together mechanic.
