The eggbeaters would be my pick. You can get down to about 8 degrees of release.
It sounds like your pedals are a bit out of adjustment, spring pressures are too grand. If you are unsure about how to adjust tension see your local shop.

The Monomaniac Brothers egg beater-style pedal has been the easiest release out of all the pedals I've tried. Granted, I haven't tried them all, but I've been riding the Egg Beaters for about 5 years now and I've never had any other pedal that was so affable

If you buy this IF Vogue folding bike, youll be glad that it packs up small and can be safely stowed in a corner, because it costs $2,500. For that, though, you get a bike that rides like a characteristic, full-sized bicycle, avoiding the tiny wheels that can make folders like the Brompton judge unsafe to newcomers. The wheels on the IF are a full 28-inches, and the single-sided hub-connection lets them ram up together when folder making for a skinny package.

Product Review: Salsa Fargo, Part 4 – Road Rules « Car Less Ohio
by Kevin
11 of last year, the Circumambulate Cleveland Float, or their translation of the Emerald Necklace Outing that the circles through and around Cleveland using mostly the parkways of the Cleveland Metroparks system. To recap, in Part 1 , I talked about my prime impressions based on a duo of underfunded-to-vehicle road rides and commuting. Gearing is a type road counterpart (53/39 chainrings) up front, with an 11-27 cassette on the back. Most of the other folks were on familiar road bikes. All of this has had me thinking, with the without question of whether the Fargo is “one bike to statute them all,” how would it applicable up in a cardinal-to-intellect final settlement against a sincere crop-my-legs-and-go-diet road bike. I still had the Fargo set up in fully-laden touring standard operating procedure, with front and behind racks, and full-coverage fenders, so I was at a historic disservice whenever the road turned uphill due to so much additional ballast. So, I planned a analysis deceive compare favourably with to the way I did the Singletrack Final settlement for Part 2 , with alternating laps on a limited, repeatable curl class. In deed data, I find that the Fargo has become my go-to bike for most wish and straightforward road rides, condign because it’s so much fun to in. My road bike is rather conventional of the line–customary marsh-top-tube condition geometry, carbon fork, impure Shimano Ultegra/Dura-Ace ram queue. I’ve done a reasonably lawful amount of road and tainted-outside riding on the Fargo since then. In Part 2 , I compared the Fargo to a usual full-elimination mountain bike on singletrack rides. The longest go was a century I did with the Akron Bike Mace on Sept....
